Shojin-Ryori Chef Bernd Schellhorn and his partner, talented photographer Mitsue Nagase talk here about a passion project is called: "Shōjin & the Roots of Food-Traditions in Japan" They are doing a series of in-depth interviews with experts and artisans across Japan.

It is so important to document these traditional aspects of Japanese culture, so important to Japanese heritage, but are dwindling in use and understanding in modern life.
